
Did you know that I did my homework on this recipe way before it was due? true story. I made a first round of the crepes, filled them with butter and macadamia nut sugar. They were lovely. I froze the rest of the crepes with plans to try different fillings. That's where things broke down. I haven't completed my second round yet and I'm late on posting. whoops.

As soon as I saw that Jaime had selected these crepes, I thought of the semester I spent in Galway, Ireland. Yes, I thought Ireland, not France. On Sundays there was an open market in the city and one crepe vendor would make the most delicious crepes. My favorite was a breakfast one filled with eggs, spinach, sundried tomatoes and salty feta. Unbelievable. I still plan to do a similar version this weekend after my long run, with oven dried tomatoes see pictured here. Find the crepe recipe
